Soul-Warming Spiced Oatmeal

Looking for something to warm you up on a chilly winter morning? This oatmeal is divine, and very good for you, too! It’s packed with flavor, and with the addition of the almonds, it is a good source of protein – about 12 grams per serving. It’s a great way to start your day!

1 Cup Old-fashioned rolled oats
½ Cup Dried cranberries
1 Cup Water
1 Cup Milk
Zest Of 1 medium orange
1 Tbsp Unsalted butter
½ tsp Salt
¼ tsp Ground cinnamon
¼ tsp Ground cardamom (optional)
4 tsp Dark brown sugar, or to taste
¼ Cup Sliced almonds, toasted*

Milk or cream if desired

In a small saucepan combine the oats, dried cranberries, water, milk, orange zest,
butter, salt, and spices. Cook over medium heat until mixture comes to a boil. Reduce
heat, and simmer while stirring, until the oats are tender and creamy. Remove from heat
and divide between 2 bowls. Top with brown sugar and toasted almonds. Serve hot with
milk or cream if desired.

*To toast almonds: Pour sliced almonds into a small skillet. There is no need
to add any oil or butter. Place the skillet over medium heat, and gently stir the
almonds. The heat coaxes out the oil in the nuts and helps to toast them. Before
they brown they will become aromatic. When they turn a nice golden brown,
remove the pan from the heat, AND remove the nuts to another dish. They will
continue to cook if left in the hot skillet.
