Happy New Year! I hope you and your family had a restful holiday season and are off to a great start in 2011.
I thought it would be appropriate to share a salad today... as many of us over~indulged in the past few weeks.
If you are looking to lighten up, serve this with chicken this week for a quick weeknight meal.
Almond Citrus Salad
Adapted from Southern Living
2/3 cup vegetable oil {I used olive oil}2 teaspoons grated grapefruit rind
1/2 cup fresh grapefruit juice
1 (0.7-ounce) envelope Italian salad dressing mix
1 grapefruit {peeled and sectioned}
2 oranges {peeled and sectioned}
1 avocado, peeled and sliced
3 cups torn spinach
3 cups torn leaf lettuce
3 cups torn iceberg lettuce
1/2 cup sliced celery
1/2 cup chopped green bell pepper
1/4 cup Sweet-and-Spicy Almonds {See recipe below}
Combine oil, grapefruit rind and juice. Shake in a jar and set aside.
Combine grapefruit, oranges, avocado and next 5 ingredients. Add dressing, tossing to coat.
Sprinkle with Sweet-and-Spicy Almonds:
1 cup sliced almonds
1 tablespoon butter or margarine, melted
1 1/2 teaspoons sugar
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/8 teaspoon dried crushed red pepper
Pinch of salt
Combine almonds and butter, stirring well. Next combine sugar to the
remaining ingredients. Sprinkle sugar mixture over almonds; toss to
coat. Spread on a lightly greased baking sheet.
Bake at 325°, stirring occasionally, 15 minutes; cool.
