Apricot Jewels
Makes 20
6 Tbsp       Unsalted butter, softened
¾ Cup       Sugar, divided
2 tsp          Lemon Zest
¾ tsp         Almond extract, divided
2 Large     Eggs, separated
½ Cup       All-purpose flour
½ Cup       Almond flour
½ tsp         Salt
¼ tsp         Baking soda
1 Cup        Apricot jam or preserves
½ Cup       Finely chopped blanched almonds
½ Cup       Sliced almonds
3 Tbsp      Sparkling sugar, optional

Preheat oven to 350˚. Grease a 9 X 9 inch baking pan.

Cream the butter, ½ cup sugar, lemon zest, and ½ teaspoon almond extract until light and fluffy. Beat in egg yolks, one at a time. Stir together the flour, almond flour, salt and baking soda, and gradually add to the sugar mixture. Spread, or pat, into the prepared pan. Cover the mixture with jam. Beat egg whites until foamy, gradually add sugar, and beat until stiff peaks. Beat in remaining ¼ teaspoon almond extract. Fold in chopped almonds and spread over the top of the jam. Sprinkle the top evenly with sliced almonds, and sparkling sugar (if using). Bake about 40 minutes. Cool and cut into 20 bars. Store in an airtight container.
